200-300gms good quality steak (preferably fillet or rump)
50 ml extra virgin olive oil;
50 ml saki or dry sherry;
25 ml soy sauce;
1 small red onion, finely chopped;
2cm ginger peeled, chopped fine or grated;
freshly ground black pepper.
Marinate the steak for at least an hour then drain and bbq or grill for 3 minutes each side, keeping it a little rare. Slice across the grain and divide between the 2 plates with the Citrus Noodles.
Soak 125 gms vermicelli noodles in boiling water as per packet.
Gently dry-fry 2 tablespoons sesame seeds.
Mix 1 tablespoon extra virgin olive oil; grated rind and juice of ½ an orange; grated rind and juice of ½ grapefruit and the sesame seeds
Combine drained noodles, dressing and 100 gm beansprouts. Place half of the noodle mix on teach of two plates.
